Canning, Round 1

Tada! Nothing like having a blog to spur me on to taking pictures of the canned goodness:canning2.jpg ON the left there is the “Squash Pickles”, a first time effort. It’s diced zucchini, one random cucumber I found this morning, chopped onion and a little green pepper. The syrup is different because this one is more sugar than vinegar. The seasonings are ginger and dried mustard. Tastes interesting- almost candied, with that ginger! I’m thinking the same syrup might be amazing with pineapple or nectarines. Might give that a shot! The other one, is a “cucumber relish” as the recipe called it. All the traditional pickling spices, lots of cider vinegar, but not mushy like a sandwich relish. Both recipes yielded 4 pints and neither one was all that salty. The relish used 1/4 c. salt for the brine, but then the cucumbers were drained. The pickles called for a mere 1 t. of salt!
I even had time to go to the farm market. I came home with lots of good things including a quart of sour cherries. Probably going to make a pie, after I get all those cherries pitted!
